Tony’s Kitchen: Onion Bhajis
Taking a break from conjuring up a batch of delicious cookies, and preparing one of his famous homemade loaves, Tony’s has shared some of his recipies with us. This month’s recipe and all future recipes can be found on our blog. Bon appétit!
Onion Bhajis
Ingredients
4 large onions (sliced)
1/3 of a normal bag of Gram Flour
1 full tea spoon of Turmeric
1 full tea spoon of Cumin
1 full tea spoon of Bicarbonate Soda
Chilli Powder (to taste)
Sal and Pepper (to taste)

Method
Combine all the ingredients and let it rest for 1 hour. Don’t panic if it doesn’t look like there is enough mixture to cover all the onions, the juice from the onions will solve this. Heat the oil in a deep saucepan. Before you start cooking, mix 2 tea spoons of lemon juice into the mixture. The mixture should fall off the spoon the same way a cake mixture would. If it’s too dry, add more lemon juice. Drop a table spoon amount of the mixture into the oil for cooking. Remember to turn them over half way through. If the oil is too hot it’s quite possible that the middle won’t cook, but you can stick them in the oven if this occurs.
