Thai Green Curry
Ingredients – serves 2
2 Sweet potato
1 Tin coconut milk
1 Large teaspoon Thai green curry paste
1 Large onion
Handful of spinach
400g Tin butter beans
Method
Peel potato and cut ½ small and ½ chunky
Peel and chop onion into chunks
Place in pan with a little oil and curry paste
Fry for a few minutes then add coconut milk
Bring to boil and simmer stirring occasionally to break up small pieces of potato
Add salt and pepper to taste
Add spinach and butter beans for last 5 minutes
Enjoy!
